This light, creamy cheesecake is topped with crushed amaretti cookies and served with a nectarine compote on the side.

Serves 8

1¼ cups graham cracker crumbs

¼ cup ground almonds

5 tablespoons unsalted butter, melted

For the filling

heaping ½ cup mascarpone cheese

½ cup ricotta cheese

¼ cup superfine sugar

2 eggs, separated

½ teaspoon vanilla extract

1 tablespoon cornstarch

scant ½ cup crème fraîche or sour cream

1¾ ounces amaretti cookies

For the compote

4 ripe nectarines

¾ cup white wine

heaping 1/3 cup superfine sugar

1 vanilla bean
